The most common mistake with apple cider vinegar is not the amount. It is the moment.
The research is about anticipation, not repair
Almost every study that found something interesting about vinegar and blood sugar administered it before a meal — typically somewhere in the twenty to thirty minute window beforehand. That is not an arbitrary protocol detail. It follows from what acetic acid appears to be doing.
The proposed mechanisms are about how a meal is handled on the way in: slowing the rate at which the stomach empties, and interfering slightly with the enzymatic breakdown of starch. Both only matter if the acetic acid is present when the food arrives.
Take it afterwards and the meal has already been dealt with. You have consumed a supplement at the one moment its proposed mechanism has nothing left to act on.
Which meal, though
Whichever one comes before your worst hours. For most people that is lunch, because the afternoon is where eating plans go to die. If your problem is late-evening grazing, take it before dinner instead. The principle is that you are aiming at a specific window, not sprinkling it over the day.
What you should not do is take two, one before each. Doubling does not double anything useful and it reliably doubles the chance of the stomach complaints that make people abandon it in week one.
Why water, every time
Two reasons, and both matter more than they sound.
Soluble fibre works by taking on water and thickening. Without enough water it is doing half a job, and the half it is doing is more likely to feel like bloating than fullness.
The second is acidity. Diluting matters, and it is why the gummy format has a genuine advantage over the liquid: dentists have been warning about vinegar and tooth enamel for years, and the warning is not theatrical.
The adherence point nobody makes
Every supplement trial ever run is, underneath, a study of whether people kept taking the thing. A protocol that requires measuring a tablespoon of something sour into a glass has a compliance problem that no amount of mechanism can rescue.
This is the honest case for the format. Not that a gummy is pharmacologically superior, but that a four-second routine survives a stressful Tuesday and a measured shot does not. The version you actually take beats the version that is theoretically better.
